Low Calorie Chilli Con Carne Recipe

Ingredients (Serves 4)
Low-calorie cooking spray
500g 5% lean minced beef
1 large onion, finely chopped
2 garlic cloves, minced
1 red pepper, diced
1 yellow pepper, diced
1 tsp ground cumin
1 tsp smoked paprika
1 tsp chilli powder (adjust to taste)
1 tsp ground coriander
400g tin chopped tomatoes
2 tbsp tomato purée
400g tin kidney beans, drained and rinsed
1 beef stock cube dissolved in 150ml hot water
Salt and pepper to taste
Fresh coriander, chopped (optional, for garnish)
Method
Spray a large non-stick pan with low-calorie cooking spray and place over medium heat.
Add the minced beef and cook for 5-7 minutes until browned, breaking it up with a wooden spoon.
Stir in the onion, garlic, and peppers, cooking for another 5 minutes until softened.
Sprinkle in the cumin, smoked paprika, chilli powder, and ground coriander. Stir well and cook for 1-2 minutes to release the flavours.
Pour in the chopped tomatoes, tomato purée, and beef stock. Stir everything together and bring to a simmer.
Add the kidney beans, season with salt and pepper, then cover and simmer on low heat for 20-25 minutes, stirring occasionally.
Remove the lid and simmer uncovered for another 5 minutes to thicken if needed.
Garnish with fresh coriander if desired and serve with steamed rice or a crisp side salad.
